The Czech Republic

We are winding down on our last day in Prague. We only planned for 4 nights here but if we'd left some space here for flexibility, we both agree we would've enjoyed another couple of days.
Our hotel room is near the train station and Old Town. We've been able to walk to all of the famous landmarks in town as well as across the Vltava River. The city is known for its easy access to use public transportation, so we knew we always had that option available to us.
One question we had before coming was whether or not to exchange money for their Czech Korunas but we've found that all of the stores and restaurants we've visited accepted cards/contactless payment. The only time I would've liked to have had some "crowns" was in the street market for some fruit.
There are so many bars and restaurants here and my sense is that many visitors are here for the party. I am not sure if H would agree with this, but I feel like this is Las Vegas but instead of flashing lights, there is intensely rich architecture and deep history around every corner. We made a point to eat some traditional Czech dishes like beef goulash, potato pancakes, schnitzel - after all, we can't remember ever seeing a Czech restaurant in Arizona. Everything has been very good and very filling. I will admit we did find an American restaurant last night - Sandwich Rodeo. I mention it because it was excellent. Very casual, but the fried chicken sandwich and the patty melt were the best we've ever had! We told our server that our next cities to visit will be in Poland and she mentioned there is a sister-restaurant there. I am tempted to ask the internet the name of the place so we can check it out.
Travel advice? Don't skip Prague!
